Welcome to this week's edition of the GRATE Newsletter!
Hello Everyone,
Fermented foods are having a major moment, driven by the growing consumer focus on gut health and the microbiome. With 70% of the immune system located in the gut and increasing research linking gut health to everything from digestion to mental well-being, shoppers are actively seeking out products that deliver both flavour and functional benefits. In fact, the global fermented food market is projected to reach $1.5 trillion by 2030, as demand for probiotic-rich, naturally preserved foods continues to rise.
